The method “Pétillant Naturel” – also called Pet Nat – is a classic way of making sparkling wine, it is also a bottle-fermented sparkling wine, but here the still fermenting must is filled into the bottle and closed with a crown cap. The fermentation continues in the bottle and the desired carbonic acid is created. The wines of the Méthode Ancestral are not stored on yeast and are therefore much more fruity and vinous than champagne or sparkling wine.
